Go on. Say the magic word “Hollywood” and revel in the glamour drenched shimmering images of the land of eternal summer. Over the past 10 years that I have been going back to Hollywood, it  has been imperceptibly and slowly working it’s magic on me. Reality  has been becoming more exciting than fantasy. For the past ten years, to get the flavour of Hollywood, I have been staying in the  iconic hotels where the stars and movie Moghuls live and dine. The “Pretty woman hotel” the Beverly Wilshire, Beverly Hills Hotel and Belair Hotel. But it was this time that I got to the very throbbing heart of Hollywood, right there on the Hollywood walk of fame and the Dolby Theatre where the “Oscars” are held in all their glory and glitz.

It gets better and better. Not only does the heart of Hollywood beat right here, but I am also  privileged to be let into the secrets of the grandest, most glamorous of awards…The Oscars. Not only is this tall and slender, comfortable yet luxurious  Loews Hollywood linked directly to the Dolby Theatre where the Oscars are held, but year after year it plays host to many an award winner, who stays here (inspite of having a home in Los Angeles).  It stands close to the historic Chinese theatre, right there with the walk of fame spangled with stars. It also  stands at the foot of the fabled Hollywood Hills, with the Hollywood sign gleaming right there. Chef Mark I Ching and Jaclyn Slifer are not only part of the team that oversees the Oscar party but they also serve the beautiful people the fabulous food that keeps them slender and slim and glowing.


 Since Hollywood is all about fit and fabulous the ever-creative brilliant chef Mark I Ching and Loews new initiative is that of healthy food.He serves up more and more vegan fare and ofcourse ensures that it is tasty too. The charming and slim Jaclyn Slifer shares many an interesting anecdote about the Oscar ceremony and the banquets served. Chef Mark shares his culinary secrets and recipes. Having honed his talents in many a high profile establishment, and cooked for many a Hollywood star, Chef Mark has simple but very effective culinary rules.  We chat by the gleaming blue rooftop pool and the Hollywood sign from the Hollywood hills looks on. I quiz Chef Mark and he points out that everyone is aware of the fact that frying destroys the nutritive values but so does any kind of overcooking.  Using only healthy fats, especially olive oil is what he recommends.  Here in Hollywood, the land of fantasy where reality is more fantastic than fantasy, everything is possible. Including eating tasty and staying slim.

Antioxidant – Rich “Oscar” Cookies

What if you are always on the go ? And need a quick pick me up? Whats a great energy boosting, hasslefree breakfast one that has protein and carbs? Voila! Chef Mark I ching has the answer: The Antioxidant rich Oscar cookies. Easy to make, Easy to carry and energizing. Could we ask for more?

5              ripe bananas

4 cup               old fashioned rolled oats

4 cup               frozen blueberries

2 cups              raisins

1-1/2 cups       pomegranate juice

1 cup               finely chopped dated

¾ cup              chopped walnuts

¾ cup              unsalted sunflower seeds

1 cup               ground flax seed

Preheat oven to 300 degrees F.

Mash the bananas until a pulp.  Add remaining ingredients and mix thoroughly.  If too stiff, add some pomegranate juice.  If too loose, add some oats.

Either lightly grease, or parchment line a cookie sheet.  Scoop2 oz portions, and slightly flatten when placing on cookie sheet.

Bake for 10 – 12 minutes, or less if they start to darken.  Cool of a wire rack.  Refrigerate leftovers.
